You're about to find out. Try the Butcher with headcheese, picked jalapenos, smoked ham, chimichurri sauce and lemon parsley aioli. Other dogs come topped with kimchi, white bean chili, chorizo con queso and even Fritos. The case however is filled with sausages, meats both smoked and raw.
