Seeking Out Scarce Soft-Shells:
It's a tough year for soft-shell crabs. Congressional Seafood's Tim Sughrue tells Eater that this has to do with the fact that this year was the coldest winter in decades, combined with last year being a tough year for the crabs as well. Many were killed during the cold, or haven't yet resurfaced from the mud. All this adds up to higher prices on accouint of the scarcity.
