This is the new Japanese—contemporary, bold and never quiet or obeying. Fiber-optic chandelier changes colors for a drop of drama atop your meal. Cook-your-own-kobe and then order sushi just for the heck of it. Note the brilliant use of exotic herbs and ingredients translated as familiar condiments, sauces and marinades. This ain’t your momma’s sushi.
