Try a delicate Vietnamese crêpe filled with chicken, shrimp and bean sprouts. Another good bet is the minced shrimp wrapped around a stalk of cane sugar, or the garlicky roast crab in season. The pan-fried soft-shell crab is worth the wait for a table.
