Tonkotsu ramen shops specialize in pork, pork and pork — lucky then for Philly's noodle obsessives that Nom Nom fits that fatty bill perfectly. Offering up miso, spicy miso, shio (salt) and shoyu (soy) varieties of soup, all prepared using a homemade pork-broth base and fresh toppings aplenty (yes, including pork belly), it's a ramen freak's dream, open for lunch and dinner daily. And please don't sleep on the non-ramen options, either — these guys make a mean pork bun.
The miso ramen might be the most popular choice, but the shio (salt) ramen is my favorite. Don't forget this close at 9pm. Perfect not just for lunch but also for dinner.
If you can take the heat, ask for extra-spicy — they will NOT hold back, and that's a hard trait to find among soup specialists!
