Chef Gavin Kaysen, formerly of New York's Café Boulud, presents American fare at Spoon and Stable in Minneapolis. His menu ranges from bison tartare to bacon-wrapped monkfish to roasted duck breast with sprouted buckwheat, radish, blood orange and foie gras sausage.
