Houston's well-lauded Enchilada Queen is branching out her business yet again. Over the weekend, Sylvia Casares opened her third spot, over on Eldridge in the heart of the Energy Corridor— and, in a departure that fans will notice immediately, branded it not as Sylvia's Enchilada Kitchen, but as simply Sylvia's.

In 2012, Sylvia's Enchilada Kitchen founder Sylvia Casares was shot and seriously wounded by her then boyfriend Michael Warren. Just Tuesday (June 24) Warren pleaded guilty to aggravated assault with a deadly weapon after having been accused of shooting Casares in the abdomen at her Fulshear home. Today, Casares, affectionately dubbed the Enchilada Queen, released this statement:
