Cajun Creole. The food is deeply satisfying with a touch of spice. It's essentially Louisiana cuisine, with a heavy emphasis on beans, rich flavorful sauces, and of course, rice. There are etouffees, gumbos, jambalayas, red beans and rice, in various combinations.
